Washoku 和食

Japanese cuisine

Washoku is associated with an essential spirit of respect for nature,

closely tied to the sustainable use of natural resources.

It is a social practice based on a set of skills, knowledge, practice and traditions used in the production, processing, preparation and consumption of food.

“Well-balanced and healthy Washoku diet”. The Washoku diet is composed of rice, miso soup, several dishes of fish, vegetables and pickles.

KATSURA is based on traditional Japanese Washoku by a professional Washoku chef.

和食は、自然を尊ぶという精神を持ち、自然の恵みと永く付き合っていくという考え方に基づいています。

食物の生産、加工、調理、消費にかかわる技能と知識と慣習と伝統が一体となった日本の文化です。

「バランスがとれた健康的な和食」はご飯、みそ汁、魚料理、肉料理、野菜、漬物で構成されています。
